LEMON TARTS |

MILKMAID Sweetened Condensed Milk |

Method | | |

1. | Cut cold butter into small pieces. With the help of a palette knife rub butter into the maida. |
|
|
|
2. | Sprinkle cold water over the maida and using the palette knife combine into a ball. |
|
|
|
3. | With minimum handling, roll into 1/8" thick pastry. Using a cutter cut out rounds 1/2" more in diameter than the tart case. |

|
4. | Line the lightly greased tart cases with pastry and bake blind* at 180° C for 10 - 15 minutes or till done. Allow to cool. |

|
1. | Hang NESTLÉ Slim Dahi in a muslim cloth for 1 hour. |
|
|
|
2. | Beat the hung curd till smooth and creamy. Add NESTLÉ MILKMAID, lemon juice, half the lemon rind and mix well. Add a little colour and mix well. |
|
|
|
|
1. | Fill the tart case with the filling. |
|
|
|
2. | Serve topped with cherries and lemon rind. |

Tip | | |
|
To bake blind means lining the tart cases with cut rounds of butter paper and pouring some beans on top to prevent the pastry from puffing up. Cool the tarts completely before removing them from the moulds. |
