Peach Sour Cream Drop Shortcakes

Ingredients:

3/4 tsp orange zest
1/2 cup lowfat sour cream
1 cup whipping cream, chilled
3 tbsp sugar
1/2 cup lowfat milk
1/2 tsp baking soda
1-1/2 tsp baking powder
1/2 tsp salt (necessary)
1-1/2 cups all purpose flour
2 tbsp unsalted butter, chilled and cut into bits
1/2 tsp vanilla extract
2 tbsp confectioner's sugar
2 lb fresh peaches, thinly sliced
2 tsp lemon juice
1 cup sugar

Cooking Directions:

Combine first 3 ingredients in a mixing bowl. Mix thoroughly. Cover and chill until ready to serve. Preheat oven to 425°F. Combine next 5 ingredients in a food processor or large bowl. Cut in butter until mixture resembles coarse meal. Mix together orange zest, sour cream and milk in a bowl. Add flour mixture. Process until flour mixture just forms a soft dough. Do not over process. Spoon dough onto lightly buttered baking sheet 1 in. apart. Press dough to .5 in. thickness. Bake 12-15 minutes or until golden. Let cool on a rack. Using chilled bowl and beaters, whip whipping cream, confectioner's sugar and vanilla to soft peaks. To serve shortcakes, split cakes horizontally with a fork. Spoon peaches over and top with a dollop of whipped cream.
