Cheddar Apple Muffins

Ingredients:

1/4 cup all purpose flour
1/4 cup cheddar cheese, shredded
1 tart apple, peeled, cored and finely chopped
1/4 cup brown sugar
4 whole wheat English muffins, split and toasted
2 tbsp unsalted butter, cold

Cooking Directions:

Turn on broiler. Combine flour, brown sugar and cheese in a bowl. With pastry blender or 2 knives, cut in butter just until coarse crumbs form. Top each muffin half with chopped apples, then crumb mixture. Broil 6 in. from heat 2 minutes or until topping is golden.
